Kolhapuri Chicken Curry
Ingredients:
- Chicken cut in to small pieces-1/2kg
- Oil-2tbsp
- Cumin seeds-1/4tsp
- Cardamom-2nos
- Cloves-2
- Cinnamon-small inch piece
- Onion thinly chopped-2 nos
- Tomato thinly chopped-2nos
- Ginger garlic paste-1tbsp
- Green chilly-2 nos
- Turmeric powder-1/2tsp
- Kashmiri chilly powder-2tbsp
- Coriander powder-1/2tsp
- Garam masala-1/2tsp
- Nutmeg powder-a pinch
- Water-1cup
- Salt-to taste
- Thick coconut milk- 1/4 cup
- Coriander leaves chopped-1tbsp
- Heat oil in a pan; splutter cumin seeds and cardamom, cinnamon and cloves.
- Add chopped onions and saute until golden in color.
- Add ginger garlic and green chilly; saute until raw smell goes off.
- Add all the powders one by one after mixing each addition.
- Add tomato and saute until mashed well.
- Add chicken pieces and salt.
- Saute for 5 minutes.
- Add boiled cup of water and thick coconut milk.
- Cook covered for 20-25 minutes on low-medium flame until curry thickend and chicken cooked well.
- Sprinkle coriander leaves on top and serve hot.
