Chicken Ghee Roast

Chicken ghee roast is a Mangalore special delicious, spicy and juicy chicken recipe. It uses ghee to prepare the masala and hence the name ghee roast. Its  really a well spiced gravy, that goes well with all types of roti, bread and especially with ghee rice.

Ingredients for marinating:
  1. Chicken- ½ kg
  2. Turmeric powder- ½ tsp
  3. Chilly powder-1tbsp
  4. Yoghurt- ¼ cup
  5. Ginger garlic paste-1tbsp
  6. Coriander powder-1tbsp
  7. Lime juice-1tsp
  8. Salt-to taste
  • Marinate the chicken with all other ingredients listed above and let it rest for 20 minutes or until you prepare the masala.
To Prepare the Masala:

  2. Ghee-3 tbsp
  3. Cumin seeds- /4 tsp
  4. Fennel seeds- ½ tsp
  5. Pepper corns-1tsp
  6. Fenugreek seeds-a pinch
  7. Cinnamon-1 small inch stick
  8. Cardamom-1
  9. Cloves-4
  10. Kashmiri dry red chilly -4 nos
  11. Garlic-4 big pods
  12. Onion-1 small
  13. Salt-to taste
  14. Tamarind soaked in ¼ cup hot water-a lemon sized
  • Heat a tablespoon of ghee in a pan, reduce the flame to simmer mode.
  • Splutter cumin seeds followed by fennel seeds and fenugreek.
  • Quickly add cinnamon, cardamom, clove and garlic pods.
  • Sauté for a while until garlic gets roasted.
  • Add thinly chopped onions and sauté until transparent.
  • Switch of the flame and when the mixture cools down completely; make it in to a fine puree using a blender by adding the tamarind pulp extracted.
  • Now heat a heavy bottomed pan and add the marinated chicken pieces in to it.
  • Cover cooks it on low flame until half done (stir often).
  • Meanwhile in another pan heat two tablespoon of ghee; add the blended puree along with ¼ cup of water and little salt.
  • Mix well and cook it on low flame for 7-8 minutes.
  • Add the half cooked chicken pieces in to it and mix well.
  • Cook for another 10-15 minutes until the chicken pieces cooked well and thickly coated with the masala.
  • Serve hot and enjoy the great taste.
