Carrot Pulao / Carrot Rice

Carrot rice / carrot pulao is a quick and affordable meal for all; especially for kids. I tried many of pulao recipes and listed in my Recipe Book. And here is the simple recipe preparation of carrot pulao.
  1. Carrot – 1 large grated.
  2. Cooked basmati rice-2 cup
  3. Oil-1 tbsp
  4. Mustard seeds-1 tsp
  5. Cumin- ¼ tsp
  6. Cardamom-2
  7. Cloves-3
  8. Cinnamon-1 small stick
  9. Bay leaf-1
  10. Cashew nuts-few
  11. Turmeric powder- ½ tsp
  12. Chilly powder- ½ tsp
  13. Garam masala- ½ tsp
  14. Salt-to taste
  15. Coriander leaves-few
  • Heat oil in a pan; splutter mustard seeds.
  • Add cumin seeds followed by cardamom, cloves, cinnamon and bay leaf.
  • Add cashew nuts and sauté until golden in color.
  • Add turmeric powder followed by chilly powder and garam masala.
  • Add grated carrot and salt.
  • Sauté for 5-6 minutes until the carrots get cooked.
  • Add cooked rice in to it and mix well for 2-3 minutes.
  • Switch off the flame and garnish with coriander leaves
  • Serve hot with pickle and raitha.
