Broccoli and Almond Soup


Broccoli and almond soup is a healthy, delicious and simple soup recipe that can be able to make within 30 minutes. It’s a perfect dish for warming up the winter. The combination of ground almond and broccoli makes a creamy, yet cream less soup with a rich green color.

Ingredients:
  1. Broccoli florets- 1 cup
  2. Almond- 10 nos
  3. Onion-1
  4. Oil-1 tsp
  5. Butter-1 tsp
  6. Pepper powder- 1 tsp
  7. Salt-to taste
  8. Milk- ¼ cup
  9. Corn flour-1 tsp
  10. Fresh cream- 1 tbsp (optional)
  11. Water / vegetable stock- 1 ¼ cup
Preparation:
  • Soak almond in warm water for 2 hours.
  • Peel its skin if desired.
  • Wash and clean broccoli well. Separate it in to small florets.
  • In a large pan, heat oil and butter.
  • Add thinly chopped onions and sauté for a minute until transparent.
  • Add broccoli florets and sauté for another 5 minutes.
  • Add water, salt and pepper powder.
  • Cook for 15-20 minutes until broccoli cooked well.
  • After cools down strain the water and broccoli .
  • Keep the strained water aside.
  • Blend the broccoli and onion mixture in a blender to a smooth paste. (keep some florets for garnishing)
  • Add it again in to the cooked strained water and cook again in low flame.
  • Mean while blend almonds with little milk in to a smooth paste. (Keep some slices for garnishing).
  • Add the almond paste in to broccoli soup along with remaining milk.
  • Add corn flour (diluting with little water/ milk) in to it and stir well for another 2-3 minutes until the soup starts thickening.
  • Garnish on top with sliced almonds, broccoli and fresh cream.
  • Note: You can avoid adding corn flour; if you already get the thick consistency for soup without adding corn flour.
  • Always serve the soup hot !!!
