Broccoli and Almond Soup
Ingredients:
- Broccoli florets- 1 cup
- Almond- 10 nos
- Onion-1
- Oil-1 tsp
- Butter-1 tsp
- Pepper powder- 1 tsp
- Salt-to taste
- Milk- ¼ cup
- Corn flour-1 tsp
- Fresh cream- 1 tbsp (optional)
- Water / vegetable stock- 1 ¼ cup
- Soak almond in warm water for 2 hours.
- Peel its skin if desired.
- Wash and clean broccoli well. Separate it in to small florets.
- In a large pan, heat oil and butter.
- Add thinly chopped onions and sauté for a minute until transparent.
- Add broccoli florets and sauté for another 5 minutes.
- Add water, salt and pepper powder.
- Cook for 15-20 minutes until broccoli cooked well.
- After cools down strain the water and broccoli .
- Keep the strained water aside.
- Blend the broccoli and onion mixture in a blender to a smooth paste. (keep some florets for garnishing)
- Add it again in to the cooked strained water and cook again in low flame.
- Mean while blend almonds with little milk in to a smooth paste. (Keep some slices for garnishing).
- Add the almond paste in to broccoli soup along with remaining milk.
- Add corn flour (diluting with little water/ milk) in to it and stir well for another 2-3 minutes until the soup starts thickening.
- Garnish on top with sliced almonds, broccoli and fresh cream.
- Note: You can avoid adding corn flour; if you already get the thick consistency for soup without adding corn flour.
- Always serve the soup hot !!!
