Zero Oil Chicken Biriyani



 Zero oil recipes are really awesome and totally control your diet. but we want it delicious too. Zero oil chicken biriyani is such a yummy delicacy. It is my first time experience with zero oil recipe and the result was a great success and now I’m thinking about making more zero oil recipes. Lets go through the preparation of zero oil chicken biriyani.

For chicken masala:
  1. Chicken – ½ kg
  2. Onion-2 big
  3. Tomato- 1 big
  4. Ginger garlic and green chilly paste- 2tbsp
  5. Yoghurt- 3tbsp
  6. Turmeric powder- ½ tsp
  7. Chilly powder-1tsp (or less)
  8. Pepper powder-1tsp
  9. Garam masala-1tsp
  10. Salt-to taste
  11. Mint leaves chopped-1tbsp
  12. Coriander leaves chooped-1tbsp
For rice:
  1. Basmati rice- 1 ½ cup
  2. Cardamom-4
  3. Cloves-4
  4. Cinnamon stick- 1 inch piece
  5. Bay leaf-1
  6. Cumin seeds- ¼ tsp
  7. Lemon juice-1tbsp
  8. Salt-to taste
For garnishing
  1. Onion-1
  2. Cashew nuts-few
  3. Raisins-few
  4. Rose water-1tbsp
  5. Turmeric powder- ½ tsp
  6. Coriander leaves-1tbsp
  7. Mint leaves-1tbsp
  8. Lemon juice-1tbsp
  9. Thick coconut milk- ¼ cup (without water)
Preparation:
  • Cut the onions and tomatoes and grind it in a blender in to a fine paste without adding water (if necessary, add little water).
  • Marinate the chicken pieces with these onion tomato paste and all other ingredients under chicken masala.
  • Keep it in fridge for at least 4 hours or a whole night.
  • After that add it in to a heated non-stick pan and cover cooks it on low-medium flame for 15-20 minutes (stir occasionally).
  • Open cooks it for another 5 minutes on high flame to dry the water content in it.
  • Wash and soak the basmati rice in water for 30 minutes.
  • In a large pan boil enough more water with cumin seeds, cardamom, clove, and bay leaf.
  • When it comes to boil, add lemon juice, salt and drained basmati rice.
  • Allow it to boil for few minutes until the basmati rice gets cooked its ¾th. (Keep an eye on it, otherwise the rice gets cooked too much).
  • Drain it and spread it in a wide plate to cools down.
  • Grill the chopped onions and cashews for garnishing for 10 minutes until crisp in texture. After 5 minutes of grilling add raisins also in to the grilling pan.
  • After that do the dum process. Keep all ingredients for garnishing nearby.
  • Spread half of mint and coriander leaves on top of the chicken masala.
  • Above that spread the rice evenly.
  • On top of the rice sprinkle thick coconuts milk all over (instead of ghee).
  • Dilute turmeric powder in rose water and sprinkle it over the rice (instead of food color).
  • Spread remaining coriander leaves, mint leaves, grilled cashew nuts, raisins, onions and lemon juice on top of the rice.
  • Cover the lid tightly and put it on stove top at simmer mode for 15 minutes.
  • After that open the lid and give a nice mix.
  • Serve hot with some pickle, raitha and pappad.
