Vattayappam is a fermented steam rice cake in Kerala. It is made with thick appam batter. It is one of the Easter special recipe. Everyone loves the spongy soft steam cake. Here is the simple recipe.

  1. Raw rice / Idli rice-1cup
  2. Grated coconut- ¾ cup
  3. Cooked rice-3tbsp
  4. Active dry Yeast- ½ tsp (¼ tsp for hot climate)
  5. Sugar- 3/4cup (according to your taste)
  6. Cardamom powder- ¼ tsp
  7. Salt-1/4tsp
  8. Raisins and cashew-to decorate
  • Wash and soak the rice in water for 4-5 hours.
  • Dissolve 2tsp of sugar and yeast in ¼ cup of warm water (not hot).
  • Keep it aside for 10 minutes until frothy.
  • Grind the drained rice, yeast and sugar mix, coconut and cooked rice in a mixer until become smooth and thick paste (idli batter consistency) by adding little water.
  • Let it ferment for a whole night or 8 hours (when it get fermented; the batter will be frothy in texture and increase the volume of batter).
  • After fermentation add little salt and cardamom powder in to it and mix well.
  • Grease a steel bowl with oil or ghee.
  • Add the batter in to it to its half level.
  • Now steam cook it for 20-25 minutes on medium-low flame or until insert a tooth pick in the middle and then it comes out clean.
  • After 5 minutes of steam cooking carefully opens the lid and spread fried raisins and cashews on top of it.
  • Remold it only after completely cools down.
  • Cut in to pieces and enjoy!!!!
