Tricolor Puttu

 
 
Puttu / steamed rice cake is keralites normal breakfast made by using rice flour. Here is a variant nutritious tri color puttu recipe, which is very healthy and eye stunning.Two types of recipes are described below
Ingredients:
For the bottom layer:
  1. Rice flour / Puttu podi- ¼ cup
  2. Thinly grated carrots- ¼ cup
  3. Grated coconut-4tbsp
  4. Salt-to taste
  5. Water
For The middle layer:
  1. Rice flour- ½ cup
  2. Grated coconut-2tbsp
  3. Salt-to taste
  4. Water
For the Top layer:
  1. Rice flour- ¼ cup
  2. Thinly grated beetroot- ¼ cup
  3. Salt-to taste
  4. Water
Preparation:
  • Mix rice flour with carrots and salt.
  • Add water little by little and gently mix well with flour until the rice flour mix becomes like bread crumbs and when the bread crumbs are bind together, then they will get stick easily.
  • In this way make another two layers of puttu with rice flour itself and another with rice flour and grated beetroots.
  • Add two tbsp of grated coconut in the bottom of puttu maker and then add the rice flour coconut mix until it reaches its 1/3 rd level of puttu maker.
  • Then add 2 tbsp of coconut grated on top of it and above that the rice flour layer.
  • Again top it with grated coconut and then by beetroot and rice flour mix layer.
  • Steam cooks it for 6-7 minutes or until the steams comes out from the top.
  • Serve hot with pappad or curry.
Here is another is another puttu recipe in which rice flour is topped with thinly grated beetroots and spinach. It is a wonderful choice for kids breakfast.
