Rava / Semolina Kesari

Rava/ semolina Keasri is a popular Indian sweet dessert made with semolina and ghee. You can add any color to get the kesari looks beautiful. Here is the simple recipe.

  1. Rava / semolina-1cup
  2. Ghee-6tbsp
  3. Sugar-1cup
  4. Water-2cup
  5. Saffron crushed- of 4 threads
  6. Cardamom powder- ¼ tsp
  7. Red food color- a pinch
  8. cashews- ¼ cup halved
  • In a pan, heat ghee and add semolina and cashew in to it.
  • At the same time in another bowl add water, sugar,food color and saffron crushed. Bring to boil.
  • Roast semolina and cashew in a very slow flame for few minutes until it starts to change its color (roast well).
  • Add the boiled (at high bubbled boiling condition) water carefully in to semolina (carefully) and stir well.
  • Stir well till the whole mixture starts thickening and clearly leaves the edges of the pan.
  • Close the lid and switch off the flame.
  • Open the lid after 6 minutes.
  • Pour in to serving bowl and lay them straight.
  • Cut in to pieces with a sharp knife, serve hot or cold.
  • Decorate with fried cashews on top.
