Kerala Style Prawns Biriyani

There are many ways to make biriyani. Everyone loves to eat biriyani, for all special occasions. It can be made with anything. Prwans biriyani is a delicious preparation among sea foods. The spicy rice cooked with yummy prawns masala is really delicious and serve with some pickle, raitha and pappad.
For marinate the Prawns:

  1. Prawns- ½ kg
  2. Turmeric powder-1/2tsp
  3. Chilly powder-2tsp
  4. Ginger garlic paste-2tsp
  5. Salt-to taste
  6. Lemon juice-1tbsp
  7. Garam masala- ¼ tsp
  8. Pepper powder-1tsp
  9. Oil-for frying
For masala:
  1. Ghee- ¼ cup
  2. Onion thinly sliced-5medium
  3. Tomato thinly sliced-3small
  4. Ginger, garlic, green chilly paste- 2tbsp
  5. Garam masala-1tsp
  6. Fish masala- ½ tsp
  7. Pepper powder- ½ tsp
  8. Mint leaves chopped-2tbsp
  9. Coriander leaves-2tbsp
  10. Curd-2tbsp
  11. Salt-to taste
For Rice:
  1. Basmati rice/ jeera rice -2cup
  2. Water-4cups
  3. Cinnamon stick-2(one inch size)
  4. Cardamom pods-4
  5. Cloves-4
  6. Bay leaves-2
  7. Salt-to taste
  8. Lemon juice-2tbsp
  9. Ghee-2tbsp
To garnish:
  1. Fried onion
  2. Cashew nuts
  3. Raisins
  4. Lemon juice-1tsp
  5. Garam masala-tsp
  6. Pepper powder-1/2tsp
  7. Rose water-1tsp
  8. turmeric powder / food color- a pinch
  9. Ghee-2tbsp
  10. Mint leaves
  11. Coriander leaves
  • Soak the basmati rice in water for 30 minutes.
  • Marinate cleaned prawns with above marinate ingredients for 15 minutes and fry it until both sides are just golden in color. Don’t fry too much.
  • In a pan heat ¼ cup of ghee (or oil), fry cashew nuts until golden in color; keep aside.
  • Fry raisins and keep aside.
  • Fry one onion chopped thinly till golden crisp and keep aside.
  • In the remaining ghee add remaining onions and sauté until transparent.
  • Add ginger, garlic, green chilly paste in to it.
  • When the raw smell goes add tomato in to it;
  • When the tomatoes are mashed well.
  • Add fish masala and pepper powder, mix well.
  • Now add, fried prawns, garam masala, coriander leaves, mint leaves and salt.
  • Cook about 5-7 minutes in a low-medium flame until masala is well coated with the prawns.
  • Add curd and mix well.
  • For the rice preparation, add 2tbsp of ghee in another large pan; add cinnamon stick, cardamom, bay leaves and cloves.
  • Add 4cups of water and allow it to boil.
  • When the water gets boiling add salt, lemon juice and rice in to it.
  • Cover cook the rice for few minutes until it cooked and all the water gets absorbed (stir for 2-3 times at last time of cooking).
  • In the dum pan add a teaspoon of ghee; spread half part of cooked rice.
  • Above that spread half part of ghee, lemon juice, garam masala, pepper powder, mint, coriander leaves, fried onions, nuts and raisins.
  • Spread prawns masala on top of it and the remaining rice.
  • Sprinkle the remaining ghee, mint leaves, coriander leaves, lemon juice garam masala, pepper powder, onions, nuts and raisins.
  • Mix the orange (or yellow) food color with rose water and sprinkle it over the rice.
  • Cover the lid tightly and put a heavy weight pan on top of it on the stove top for 15 minutes on low flame.
  • Open and mix well the rice with masala, keep closing the lid for another 5 minutes to infuse all the masala with rice serve hot after 5 minutes.
