Honey Cake

 Russian honey cake is one of the yummiest cakes I have ever tasted. It is very light, sweet and perfectly moist. The cream cheese filling makes the cake really awesome. Its super easy to make at home with few ingredients and you must crave for one more bite after every bites.

  1. Eggs- 2 large
  2. All purpose flour (maida)-2 cup
  3. Baking soda-1tsp
  4. Sugar- ½ cup
  5. Honey-3tbsp
  6. Butter-4tbsp
  • Beat eggs with baking soda with hand until completely mix together. Keep aside.
  • In a large bowl add sugar, butter and honey.
  • Put the bowl on top of a double boiler; but do not touch the water (keep some distance).
  • Mix well until butter melts completely; keep stirring.
  • Add eggs in to it slowly by stirring continuously.
  • Keep stirring continuously until the volume of the mixture increase (become its double) for about 5 minutes.
  • Remove the bowl from heat and add flour in to it gradually, mix with a spoon after each addition.
  • The mixture will be in a very thick batter but a dough consistency.
  • Divide it in to 7 or 8 equal parts (I took 7).
  • Take one part and roll it on a butter paper (or greased pan) using greased hand by using a spatula.
  • Roll in to round shape. No need to be an exact circle, we need to trim it further.
  • Bake it in a preheated oven (5 minutes) at 180 degree for 5-6 minutes (5 minutes and 30 seconds is ok) until the top gets golden brown in color.
  • Repeat the process for all remaining dough. (meanwhile remaining dough should be covered fully with a cling wrap or foil to prevent drying).
  • Cut the baked cake sheets in to a correct circle by using the sharp edge of a round top. Reserved the trimmed edges for the cake decoration.  Put it on a blender and make a fine powder.
  • Note:Use two alternative baking tray to bake, so that you can bake it simultaneously without time lag. After baking the first cake sheet, no need to pre-heat for 5 minutes but for 1 minute only.

For frosting:
  1. Cream cheese-200gm
  2. Whip cream-200gm
  3. Butter-50gm
  4. Condensed milk- ¾ tin
Assembling The Cake:
  • Beat all the ingredients for icing together.
  • Take a layer of cake sheet, spread a part of icing on top of it.
  • Cover it with another layer and again top it with cream.
  • Repeat the process for all layers; lastly cover the cake with filling.
  • Spread blended cake powder all over the cake.
  • Put it on refrigerator for 4 hours to set.
  • Cut in to pieces and enjoy the great taste.
