KFC style fried chicken

The secret recipe of KFC has never been revealed. But there are lots of trying for the copy cat chicken and numerous best results also. The secret herb mix gives the irresistible aroma and taste for KFC. If we are not using any such spice mixes, then only we can get only the texture but not a good taste. Try to use the spicy ingredients more, so that it tastes more.

For marinating the chicken:
  1. Chicken- 5 medium pieces along with its skin
  2. Milk-1cup
  3. Lemon juice-1tbsp
  4. Onion-1small
  5. Garlic-3pods
  6. Chilly sauce-1tbsp (or use chilly powder itself)
  7. Salt-to taste
For egg mix coating:
  1. Eggs-2
  2. Pepper powder-1tsp
  3. Salt-to taste
  4. Ginger garlic paste-1tbsp
For flour coating:
  1. All purpose flour- ¾ cup
  2. Corn flour- ¼ cup
  3. Bread crumbs-5tbsp
  4. baking soda- 1/4 tsp
  5. Pepper powder-1tsp
  6. Chilly powder-11/2tsp
  7. Salt-to taste
  8. Italian herb mix-2tbsp (or use any herbs powder, garlic powder, ginger powder, basil leaves, oregano, kasoori methi, amchoor powder etc.)
  • Wash and clean the skinned chicken pieces.
  • Make small deep hits on the chicken with a knife.
  • Dry it with a paper towel or tissue.
  • Add lemon juice in to 1 cup of milk and keep it for 10 minutes (or you can use the butter milk itself).
  • After that add slice onion, garlic, chilly sauce, salt and chicken pieces in to it.
  • The chicken pieces should immerse in the milk.
  • Put it in fridge for 4-5 hours.
  • After that take out only the chicken pieces, and avoid rest of milk batter.
  • Mix egg with rest of the ingredients under egg mix coating.
  • Beat well until fully incorporated. Keep it aside.
  • In another bowl, mix flour with other ingredients under flour coating.
  • Put the chicken pieces in the flour mixture. Hence the chicken is fully coated with the flour.
  • Dip it in the egg batter.
  • Again coat it with the flour mixture.
  • Arrange it in a wet tray and do the same process for all chicken pieces.
  • Before putting each pieces in to flour mix, mix well the flour. So that the spices get mixed  and do not stuck in the bottom. Also give a good mix for the egg batter with another spoon.
  • Now deep fry it in the hot oil. At the time of adding chicken pieces the oil must be hot and after rthat fry it in the low flame. Otherwise the inner side didn’t cook properly. It took almost 20 mints until both sides nice golden in color.
  • Drain in to paper towels and serve hot with French fries and tomato ketchup.
Note: Deep fry it just before serving. It tastes great and crispy only when it is hot. Must fry in the low flame, otherwise the inner sides did not cook properly. salt is added in every mix, so adjust its amount according to the chicken.
