Prawns Coconut Roast

 Prawns coconut roast is a spicy dish and well flavored with pepper and coconut. You can reduce the spiciness if you wish to do. Adding coconuts gives a nice crispiness to the roast. Here is the simple recipe

  1. Prawns-400gm
  2. Oil-3tbsp
  3. Onion-2nos
  4. Ginger- 3 big pods
  5. Ginger-1 piece
  6. Turmeric powder- 1/2 tsp
  7. Chilly powder- 1tsp
  8. Fennel seeds powder- 1/2 tsp
  9. Pepper powder-1 tsp
  10. Tomato-2nos
  11. Coconut grated- ¼ cup
  12. Green chillies-2
  13. Curry leaves-2string
  14. garam masala- 1/4 tsp
  15. Coriander leaves chopped-1 handful
  16. Carrots grated-1tbsp
  17. Salt-to taste
  • Grind onion, garlic, ginger, turmeric powder, chilly powder, fennel seeds powder and pepper powder together in a blender in to a fine paste by adding little water.
  • Add 3tbs of oil in a pan, add the grinder paste in to it and sauté for 6 minutes until water dries out.
  • Blend tomatoes in to a fine paste without adding water.
  • Add it in to the pan along with prawns and salt.
  • Cook for another 5 minutes.
  • Add grated coconut, curry leaves  and spilt green chillies in to it and sauté well.
  • Add oil little by little at frequent intervals until the roast gets completely dry and dark in color.
  • Sprinkle garam masala on top of it.
  • At last add coriander leaves and grated carrots on top of it.
  • Serve hot with the choice of your roti or rice.
