Kerala Parotta / Laccha Paratha

 Kerala parotta is a layered flaky flat bread. It can easily make at home with simple efforts. You can add egg also for making parotta; then reduce the amount of milk used in it. Here is the step wise recipe of making parotta.
  1. All purpose flour-2cup
  2. Oil-2tbsp + more
  3. Warm milk- almost 3/4 cup (to knead)
  4. baking powder-1/4 tsp
  5. sugar-1tsp
  6.  salt- to taste
  • Mix flour with sugar, baking powder, oil and salt.
  • add milk gradually in to to make a smooth but sticky dough.
  • The dough should be little sticky consistency; not so smooth.
  • Cover it with wet towel for 30 minutes.
  • knead once again and let it rest for 10 minutes.
  • Divide the dough in to equal part of balls(8-9 balls).
  • Apply some oil on top it and rest for 5 minutes.
  • take a ball and roll a thin layer in a floured marble (or smooth)surface.
  • Sprinkle ½ tsp of oil on top of it; spread it on all part.
  • Sprinkle 1/2 tsp of flour(using a siever makes it perfect) on top of it evenly.
  • Now slowly lift one end of the dough; make pleats with it by lifting up and down.
  • Make it coil and tuck the other end in the bottom.
  • Cover all the spirals with a wet towel.
  • Now start rolling it by applying little oil on top of it and make it in the desired circle.
  • Heat a tawa on medium flame;add a tespoon of oil and put the paratha on top of it. d
  • When it started bubbling add oil on top of it and turn to the other side.
  • Press well till both sides cooked well.
  • Tap all the porottas to get the flaky layers.
  • Serve hot with the curry of your choice.
