Kerala Egg Roast

 Egg roast is a native dish in Kerala. The boiled eggs roasted in a masala gravy. Egg roast with appam, idiyamm and parotta are perfect comrades. It is one of simplest roast preparation and at the same time a delicious side dish.
  1. Boiled eggs-3
  2. Onion-2 large
  3. Tomato-1 big
  4. Ginger chopped-1tbsp
  5. Garlic chopped -1tbdp
  6. Green chilly -1
  7. Turmeric powder- ½ tsp
  8. Chilly powder-1 ½ tsp
  9. Salt-to taste
  10. Coconut oil-2tbsp
  11. Curry leaves-2 spring
  • Heat coconut oil, in a pan and add chopped onions.
  • Sauté until, golden brown in color.
  • Add chopped tomatoes and sauté for a minute.
  • Add chopped ginger, garlic and slit green chillies.
  • Mix well for a minute in medium flame.
  • Add turmeric powder and then red chilly powder after mixing well.
  • Add half cup of hot water and curry leaves in to it.
  • Slow cook it until the masala and water forms thick gravy.
  • Make small narrow slits on the boiled eggs and add it in to the masala.
  • Cook for another 5 minutes until the masala is well coated with eggs.
  • Serve hot with the choice of your breakfast.
