Beef Kabsa


 Kabsa  is a famous Arabic dish similar to that of Indian biryani; cooked with rice and meat. But it is less spicy and easy to make. The specialty of kabsa is the flavor of dry lemon, cinnamon, cardamom and cloves. It is made differently in each house hold. It is served with homemade tomato sauce. It also made with chicken, mutton and fish.
Ingredients:
  1. Basmati rice long-2cup
  2. Beef-1 kg
  3. Turmeric powder- ½ tsp
  4. Pepper powder-1tsp
  5. Lemon juice-1tsp
  6. Ginger garlic paste-1tsp
  7. Onion-  2nos.
  8. Tomato-2nos
  9. Tomato puree-1cup
  10. Garlic crushed- 1tbsp.
  11. Green chilly- 2nos.
  12. Carrot grated-2tbsp
  13. Garam masala-1tsp
  14. Cinnamon stick-2piece 1 inch size
  15. Cloves-4nos.
  16. Fennel seeds-1tsp
  17. Cumin seeds-1tsp.
  18. Cardamom-4nos.
  19. Dry lemon-1no.
  20. Pepper powder-to taste
  21. Salt-to taste
  22. Oil-1/4cup
  23. Olive oil-1tbsp
  24. Water- 4 cup
  25. Raisins- to garnish
  26. Peeled almonds- to garnish
Preparation:

For the tomato puree:
  • Add two tomatoes in the boiling water for 5 minutes. Now take it out from boiling water and put it in the cold water, remove the skin of both tomatoes and put in the blender and blend well without adding water. Tomato puree is ready.
For the kabsa:
  • Soak  basmati rice in water for 1 hour. Keep it aside.
  •  Marinate the beef cubes with ½ tsp turmeric powder, 1tsp pepper powder, 1tsp lemon juice,1tsp ginger garlic paste and salt for half an hour
  • Pressure cooks it for few whistles until beef pieces cooked its half by adding little water.
  •  Keep it aside.
  • Heat oil in a pan; sauté onion till golden brown in color.
  • Add garlic and green chilly, sauté a while.
  • Add cinnamon, cardamom, cumin seeds, fennel seeds and cloves .
  • Add tomato, sauté well till tomatoes are mashed well.
  • Add tomato puree, pepper powder, garam masala, carrot and dry lemon.
  •  Add the cooked beef pieces in to it along with the beef stock. 
  •  Add 4cups of boiling water and salt; (note the water level).
  • close the lid and cook for 20 minutes in low medium flame.
  •  Do not cook it openly, because the water may get absorbed.
  • Now take out the mutton pieces from the water.
  • If you feel the water level gets reduced much; then add little water to compromise the level.
  • Add the drained basmati rice in to water, close the lid.
  • Cook in low flame till the rice cooked well and all the water get absorbed.
  • Add a table spoon of butter or olive oil in another pan; roast the almonds and raisins.
  •  In the same pan put the beef pieces from water and roast both sides till golden brown in color. 
  •  Add these beef pieces in to the cooked rice.
  •  Garnish it with cashew nuts, raisins and almonds.
