Strawberry Cake with Cream Cheese Frosting

 
The creamy strawberry cheese cake is perfect for any special occasion. The two layer cake made with pureed strawberries giving an intense flavor. Then it layered with light cream cheese topping. Again top it with a strawberry jelly layer.

Ingredients For Cake:
  1. Flour-1 1/4 cup
  2. Eggs-4
  3. Sugar- 1/2 cup
  4. Strawberry-1/4 cup fresh (or frozen thawed)
  5. Vanilla essence- 1/2tsp
  6. Butter softened-6tbp
  7. Milk-4tbsp
  8. Strawberry jelly powder-1tbsp
  9. Baking powder- 3/4tsp
Preparation:
  • Sieve flour and baking powder twice.
  • Beat eggs, powdered sugar, butter and strawberry jelly powder together until creamy and fluffy.
  • Add strawberry puree, milk and vanilla essence in to this, mix well.
  • Fold it with the flour by three additions with a metal spoon.
  • Pour it in to a greased pan (with butter and flour).
  • Bake it in a preheated oven for 25-30 minutes.

For Cream Cheese Frosting:
  1. Strawberry puree-1/2cup
  2. Heavy cream-1cup
  3. Cream cheese-1pack
  4. Vanilla essence-1/2tsp
  5. Powdered sugar-1/2cup
Preparation:
  • Beat whip cream until peaks are formed.
  • Add powdered sugar, vanilla essence and strawberry puree one by one after beating each one.
  • Fold it with cream cheese and mix well.
  • Cut the cake in to two parts.
  • Place it on a spring form pan.
  • Spread 1/4 part of the cream on the bottom layer .
  • Above that spread some crushed strawberries.
  • Now place the next layer of cake and spread the remaining cream on top of it.
  • Mix 1 tbsp. of gelatin melted with 1/4 cup of pureed strawberry and pour it over the cream layer.
  • Refrigerate for 5 hours to set.
