Homemade Paneer

 
 Paneer or Indian cottage cheese is very easy to make at home with few time interval. Its made by the curdling process of milk. Only milk and lemon juice is needed to make the healthy homemade paneer. Lets go through the simple procedure of making paneer.

 Ingredients:
  1. milk-1litre
  2. lemon juice-2tbsp
Preparation:
  • Boil the milk in a heavy bottom pan.
  • When it comes to boiling point make the flame to low.
  • Add half of the lemon juice and boil.
  • Then the milk starts curdling, stir well
  • Add the remaining lemon juice and after stirring few minutes you can see the milk solids completly float on the yellowish clear water beneath.
  • At this point switch off the flame and drain (dont waste the water, it can use for making the chappathi dough like that).
  • If you want to remove the smell of lemon juice from paneer rinse it over the running water for few seconds.
  • Now add these drained milk solids in a muslin cloth(soft cotton cloth) and tie it.
  • Now hang it for 30 minutes to dried out all the water content in it.
  • After that squeeze one more to drain any excess water in it.
  • Now place a heavy weight over the hang cloth for 20minutes.
  • Open the cloth and then you can get the stiff paneer cube.
  • Cut it into small cubes and use for further cooking process.
  • You can keep it in refrigerator in a closed container for longer use.
