Chana Masala

Chana masala or chole masala is regular south Indian chick pea curry served along with poori, paratha and battura.  Chana masala is very spicy and goes very well with battura. Only common ingredients for a curry are used to make this. Here is the simple recipe of chana masala.

  1. Chick peas / Kabuli chana – 1cup
  2. Oil-2tbsp
  3. Bay leaf-1
  4. Mustard seeds-1tsp
  5. Curry leaves-2 string
  6. Green chilly slit-1
  7. Onion-1big
  8. Tomato-1 small
  9. Ginger garlic paste-1tbsp
  10. Turmeric powder- ½tsp
  11. Chilly powder-1tsp
  12. Pepper powder-1tsp
  13. Asafetida-a pinch
  14. Coriander powder-1tsp
  15. Garam masala- ¼tsp
  16. Coriander leaves-few
  • Soak chick peas in water for over night.
  • Pressure cooks it with enough more water, salt and turmeric powder.
  • Mean while heat oil in a kadai and splutter mustard seeds.
  • Add bay leaf, curry leaves and green chilly.
  • Add ginger garlic paste in to this and sauté for a minute.
  • Add onion and sauté until transparent and golden in color.
  • Add all the powders one by one and mix well after each addition (at simmer mode; don’t burn the powders).
  • Add chopped tomatoes and sauté well until all the tomato pieces are mashed well.
  • Reserve 3tbsp of cooked chana and ¼ cup of cooked water.
  • When it cools down blend well in to a  smooth paste.
  • Add remaining  cooked chick peas in to the kadai along with stock water.
  • Add blended chana paste in to the curry in order to get the thick curry consistency.
  • Add  More hot water (if u need) according to the consistency of the curry.
  • Boil for few minutes and switch off the flame.
  • Sprinkle Coriander leaves on top.
  • Serve hot with bhatura.
