Mysore Masala Dosa

Mysore masala dosa is a crisp and soft dosa spiced with vegetable pure and served along with chutney. it is a famous menu in South Indian breakfast. The difference between ordinary masala dosa and mysore masala dosa is the making of filling inside in it.
Ingredients:
For the dosa batter:
  1. Raw rice-2 1/2 cup
  2. Urad dal-1cup
  3. Cooked rice-1/4 cup
  4. Fenugreek- 3/4 TSP
  5. Salt-to taste
  6. Butter/ ghee
For the filling:
  1. Oil-1tbsp
  2. Mustard seeds-1tsp
  3. Onion-1
  4. Potato-1
  5. Carrot-1
  6. Beetroot-1
  7. Ginger-1inch piece thinly chopped
  8. Curry leaves-2string
  9. Green chilly-2thinly chopped
  10. Turmeric powder-1/2tsp
  11. Asafoetida-a pinch
  12. Salt-to taste
Preparation:
  • Wash and soak raw rice, urad dal and fenugreek in water separately for overnight.
  • Next day; grind it with cooked rice and enough water.
  • Rest for 7_8 hours to get ferment.
  • Add salt in to it and mix well.
  • For the filliling; heat oil in a pan.
  • Splutter mustard seeds and saute oinon. Until trasprant.
  • Add curry leaves, green chilly and ginger; saute until raw smell goes off.
  • Add turmeric powder and asafoetida.
  • Add all the chopped vegetables into it.
  • Add salt along with little water.
  • Cover cooks it for 15 minutes or until the vegetables are cooked well and mashed well.
  • In the dosa tawa, pour a ladle of batter and spread roundly to the size of tawa.
  • Spreas a teaspoon of ghee/butter on top of it.
  • When the dosa gets cooked on top; spread some vegetable masala on top of it and fold the dosa to serving plate.
  • Serve it with chutney.
