Simple and vegetable pulao recipes are wonderful idea for lunch boxes. Kashmiri pulao is a tasty and tempting pulao variety, having rich with spices, fruits and nuts. Hence it tastes sweet and spicy. Kashmiri pulao is one of the easiest pulao to make.

Ingredients:
  1. Basmati rice-1cup
  2. Water-1 ¾ cup
  3. Ghee-1tbsp
  4. Salt-to taste
  5. Oil-2tbsp
  6. Raisins-2tbsp
  7. Cashew nut-2tbsp
  8. Almond sliced-1tbsp
  9. Chopped pineapple-2tbsp
  10. Chopped grapes-2tbsp
  11. Pomegranate-2tbsp
  12. Onion-1
  13. Whole garam masala pieces-few (cardamom, bay leaf, cinnamon, clove)
  14. Pepper powder- ½ tsp
  15. Garam masala- ½ tsp
  16. Saffron-a pinch(optional)
Preparation:
  • Soak the basmati rice in water for 30 minutes. Drain it.
  • Pressure cooks it with 1 ¾ cup of water, enough salt and ghee for 2 whistles (first whistle on medium high flame and the next medium low flame).
  • Open the lid after cools down and then you will get the perfect ghee rice; mean while saute the other ingredients.
  • Soak the saffron in 2tsp of milk.
  • In a heated vessel add oil, sauté onion until crisp and golden in color.
  • Take it out from the oil and keep aside.
  • Fry cashew nuts, raisins and almonds.
  • Take it out from oil and keep aside.
  • Add whole garam masala pieces in to the oil.
  • Add cooked basmati rice along with saffron milk, garam masala powder and pepper powder.
  • Add chopped fruits, fried onion, nuts and raisins.
  • Mix well for a minute and serve hot with raitha or pickle.
