Chicken Fried Rice

Chicken fried rice is a tasty, nutritious, colorful and affordable food for most of all.The combination of chicken, veggies, rice and stir fried eggs make a wonderful combination. It is so simple and easy to make. For a vegetarian option substitute the chicken with tofu or any other vegetable.
  1. Basmati rice-2cup
  2. carrot chopped- 1/2 cup
  3. fresh green peas-3tbsp
  4. spring onion-5spring
  5. capsicum chopped-4tbsp
  6. egg-2
  7. cooked minced chicken- 1/2 cup (with pepper and salt)
  8. ghee / butter- 4tbsp
  9. pepper powder-1tbsp
  10. soya sauce-2tbsp
  11. sweet chilly sauce-1tbsp
  12. salt-to taste
  • Soak the basmati rice in water for 1 hour.
  • Cook it with enough more water and salt and drain (u can also cook it by making ghee rice method with 1 ½ cup of water; then no need to drain but after cools down completely; separate the rice well.).
  • Stir fry the eggs in little oil with salt and pepper powder; keep it aside.
  • Heat butter or oil in a pan ,add chopped carrots, sauté for a minute.
  • Add green peas, spring onion, capsicum, pepper powder, soya sauce, chilly sauce, stir fried eggs, chicken minced and salt.
  • Add cooked rice in to it and mix gently for 5 minutes.
  • Switch off the flame and serve hot with tomato ketchup or the choice of your side dish.
