Cabbage Rice

There are lots of variety rice recipes. Cabbage rice is one among them. All of them simply love this pulavu. It’s quite easy to make and a wonderful idea for an easy lunch box.
Ingredients:
1.     Cooked basmati rice-2cup
2.     Chopped cabbage-1cup
3.     Oil-2tbsp
4.     Mustard seeds-1tsp
5.     Urad daal-1tsp
6.     Dry red chilly-1no
7.     Cashew nut-1tbsp
8.     Peanut-1tbsp
9.     Curry leaves-1string
10. Turmeric powder-1/2tsp
11. asafoetida-a pinch
12. Chopped onion-1small
13. salt-to taste
14. Coriander leaves-few
Preparation:
·       Heat oil in pan; splutter mustard seeds.
·       Add urad dal, red chilly, cashew nut, peanut and curry leaves.
·       Sauté for a minute; add turmeric powder.
·       Add asafoetida and chopped onion.
·       Add chopped cabbage and salt in to it;
·       Sauté for few minutes until it’s cooked
·       Add cooked rice in to it.
·       Mix well until fully incorporated with the rice (sauté for 3-4 minutes).
·       Switch off the flame and sprinkle coriander leaves on top.
·       Serve hot with raitha or pickle.
