Layered Pudding

 Layered puddings are always a wonderful visual treat as well as yummy. Here I used to make the layers by mixing up of coconut pudding ,mango pudding and top it with water melon jelly.
For the bottom layer:
  1. Thick coconut milk-100ml (without water)
  2. Milk maid-2tbsp
  3. Basil seeds/ kas kas-1tbsp
  4.  Gelatin-3tbsp(for the three layers)
  5. Water- ¼ cup
  • Boil gelatin with ¼ cup of water in double boiling method or in simmer mode.
  • In another pan boil coconut milk with condensed milk (stir well, don’t burn).
  • Add dissolved half of the gelatin mixture (keep another half for the remaining 2 layers) in to the coconut milk, mix well and switch off the flame.
  • Suddenly add basil seeds in to it and mix well.
  • Let it rest for 15minutes , then the basil seeds get puffed.
  • Pour it in to a pudding mold. Allow to cool until the bottom layer gets ready.
For the middle layer:
  1. Mango(ripe)_1small
  2. Condensed milk-1tbsp
  3.  Fresh cream-1tbsp
  • Peel the skin of mango, cut in to small pieces and puree it in to a fine paste without adding water.
  • Add condensed milk and fresh cream in to it and mix well.
  • Mix ¾ part of the remaining gelatin with the above mango mixture.
  • Let it rest for 5 minutes.
  • Slowly pour it on top of the coconut pudding layer.
  •  Refrigerate it until the top layer gets ready.
For the top layer:
  1. Watermelon pulp-2tbsp
  2. Suagr-1tbsp
  3. Lemon zest- ¼ tsp
  • Mix water melon pulp, sugar and lemon zest with remaining gelatin.
  • Let it rest for 5 minutes.
  • Slowly pour it on top of the mango layer.
  • Refrigerate it for at least 5 hours to set.
