Brinjal Rice / Vangi Bath
There are lots of variety rice recipes. Brinjal rice is one among them. Brinjal is not a favorite veggie for most of them; but all of them surely love this pulavu. It s quite easy to make and something different for a usual meal.
To dry roast:
  1. Peanut-1tbsp
  2. Chana daal-2tsp
  3. Dry red chilly-2nos(depends)
  4. Coriander seeds-2tsp
  • dry roast the ingredients for 1 minute and grind it in to fine powder.
Another ingredients:
  1. Cooked basmati rice-2cup
  2. Oil-2tbsp
  3. Mustard seeds-1tsp
  4. Urad daal-1tsp
  5. Dry red chilly-1no
  6. Cashew nut-1tbsp
  7. Curry leaves-1string
  8. Turmeric powder-1/2tsp
  9. asafoetida-a pinch
  10. Chopped onion-1small
  11. salt-to taste
  12. Chopped brinjal  (small square pieces)-1cup
  13. Tamarind-1 lemon size
  14. Coriander leaves
  • Soak tamarind in little warm water.
  • Heat oil in pan; splutter mustard seeds.
  • Add urad dal, red chilly, cashew nut and curry leaves.
  • Sauté for a minute; add turmeric powder.
  • Add asafoetida and chopped onion.
  • Add chopped brinjal and salt in to it;
  • Sauté for few minutes until it cooked
  • Add tamarind squeezed pulp in to it.
  • When it becomes dry add blended powder in to it; mix well
  • Add cooked rice in to it.
  • Mix well until fully incorporated with the rice (sauté for 3-4 minutes).
  • switch off the flame and sprinkle coriander leaves on top.
  • serve hot with raitha or pickle.
