Kumbilappam / ilayada

 Kumbilappam / ilayada is a traditional kerala evening snack; having authentic aroma and taste. Banana leaves, bay leaves, turmeric leaves etc.  are used for making Ada. Instead of mashed banana, you can use mashed jack fruit.

  1. Roasted rice flour-2cups
  2. Jaggery-4blocks(as per sweetness)
  3. Small banana mashed – 3nos (or use ripe jackfruit)
  4. Grated coconut- ½ cup
  5. Coconut pieces thinly chopped- ¼ cup
  6. Bay leaves-for wrapping
  7. Salt-to taste ( ½ tsp)
  • Wash and clean the bay leaves.
  • Dry it with a kitchen towel.
  • Melt jaggery with 1/2 cup of water.
  • In a large bowl, mix rice powder, coconut grated, coconut pieces, salt and mashed bananas.
  • Sieve the hot jaggery syrup in to it and mix well (add more water if required to get a extra smooth dough).
  • Take a bay leaf and spread the dough on leaf with your hands about small thickness.
  • Now fold the leaf in to half and give a small press to bind together.
  • Do it for half of the dough and with the remaining, start making kumbilappam.
  • Take each bay leaf and fold it to make a cone shape and pin it with coconut leaf stick.
  • Now fill the remaining mix to each bay leaf mould.
  • Steam cooks all these  for about 15-20 minutes or until done.
  • Allow to cool and remove from the leaf moulds before serving.
