Dates Cake

 Dates help to provide moisture and sweetness and hence they are perfect addition to cakes. Here is the recipe of eggless moist cake with wheat flour. It is wonderfully yummy and a healthy tea time bite.

  1. Dates chopped-1cup
  2. Milk-3/4cup +1/4cup
  3. Sugar- 1/2cup
  4. Caramel syrup-1/4cup
  5. Vegetable oil-1/2 cup
  6. Wheat flour sieved-1cup
  7. Baking soda-1tsp
  8. Vanilla essence-1tsp
  9. Cashew nuts finely chopped-4tbsp
  • Soak the dates in 1/4 cup of milk for overnight.
  • Just give a blend for the dates(crush it).
  • In  a bowl mix, oil, milk and sugar together.
  • Add caramel syrup, dates and half part of cashew nuts in to it.
  • Add the flour and baking soda sieved together in to it slowly by three additions and fold with a spatula.
  • Pour the batter in to a baking tin. 
  • Spread the remaining nuts (dust with flour) on top of the cake.
  • Bake it in the pre heated oven for 180 degree for about 35 minutes or until the skewer comes out clean.
  • Cut in to pieces only after cools down the cake completely.

note: you can use 3/4 cup of brown sugar instead of sugar and caramel syrup used here.
