Boondi Ladoo Recipe

Boondi laddu is a delicious Indian sweet made for all special occasions. It needs only few time and ingredients to make.


  1. Besan flour / Gram flour-1cup
  2. Cardamom pods crushed-5
  3. Yellow/ orange food color- 1 drop
  4. Water- ½ cup (adjust to make a smooth batter)
  5. Raisins, cashew –few
  6. Ghee-1tbsp
  7. Oil-for deep frying
  8. For sugar syrup:
  9. Sugar-1cup
  10. Water- ¾ cup
  11. Rose water-3tbsp
  • Firstly make the sugar syrup, for that boil water and sugar in a saucepan.
  • Stir well on medium-low flame until, it reaches to a half thread consistency (little sticky).
  • Add rose water to the syrup and cover the lid.
  • In a bowl, mix the gram flour and food color with water and make a batter which is slightly thicker than dosa batter.
  • Heat enough oil (to deep fry) in a pan on medium-high heat.
  • Drop a pinch of batter in to the hot oil to test the temperature; if it rises soon without changing color, then the oil is ready to make boondis.
  • Now take a ladle of batter and shake the ladle to drop the batter fast in to the hot oil.
  • Fry them and take them out from the oil and suddenly with another ladle put these boondi’s in to the sugar syrup.
  • Repeat the process remaining batter, each time wipe out the batter remaining on the ladle used for boondi making (to get round shape boondi’s).
  • At last, take them out from the syrup and just press (or mash) them with your hands to pull out the extra sugar syrup.
  • Add cardamom crushed, fried raisins and cashew in to it and mix well.
  • Grease your hands often with ghee and make balls out of the boondi mixture.
  • Garnish it with raisins or cashew nut on top part.
