Arabic Mandhi Recipe

Traditionally mandhi is cooked on underground flame and it is not possible for most of us. Here is the homemade way of cooking mandhi rice with amazing taste.
Ingredients for marinating:
  1. Chicken with skin-1kg
  2. Salt-to taste
  3. Mandhi spice-2tbsp
  4. Olive oil-2tbsp
  5. Butter-1tbsp
For mandhi spice:
  1. Cardamom pods-2tbsp
  2. Cloves-2tbsp
  3. Black pepper-2tbsp
  4. Nutmeg-1whole
  5. Dried ginger powder-1tbsp
  6. Bay leaves-4
  • Dry roast for 1minute and blend all the ingredients to a fine powder.
For mandhi rice:
  1. Basmati rice-2cup
  2. Olive oil-5tbsp
  3. Onion-1
  4. Ginger garlic paste-1tbsp
  5. Green chilly-2
  6. Tomato puree-of 1large tomato
  7. Mandhi spice-2tbsp
  8. Whole garam masala pieces-cinnamon, cardamom, pepper and bay leaf
  9. Salt-to taste
  10. Water-4cup (or 3 1/2 cup )
  11. 1 bukhoor coal-cut in to 4 pieces
  • Cut the chicken in to large pieces.
  • Make small slits on it.
  • Marinate the cleaned chicken pieces with ingredients under marination for 1 hour.
  • In a heavy bottom non-stick pan add the chicken pieces and cover cook it for 20 minutes and open cook it another 15 minutes until both sides are browned and cooked 
  • Wash the basmati rice and soak it in water for 1hour.
  • Heat olive oil in a large pan.
  • Add whole garam masala pieces.
  • Saute onion until transparent.
  • Add green chilly, ginger garlic paste.
  • Add tomato puree and mandhi spices in to it.
  • Add water, salt and allow to boil.
  • Cook on medium heat until the rice absorbs all the water and cook.
  • Add the chicken pieces on top of it.
  • Now to get the smoky taste, place a foil fill it with little butter on it and a hot bit of coal (4pieces)on to the melted butter and quickly shut the lid.
  • Allow to smoke for 10-15 minutes.
  • Serve hot with salad and raita.
