Simple Egg Curry

Egg curry is an affordable choice for a quick tasty curry. Even most of the people who do not eat meat prefer egg. In the case non-vegetarians, if there is no meat then, they also prefer egg for the next choice. Here is the recipe of simple Kerala style egg curry. It is a nice combination for chappathi, appm and pathiri.
Ingredients:
  1. Boiled egg-3
  2. Onion-1 big
  3. Oil-1tbsp
  4. Cumin seeds- ½ tsp
  5. Curry leves-1string
  6. Ginger, garlic crushed- 1tbsp
  7. Green chilly-1
  8. Turmeric powder- ½ tsp
  9. Coriander powder-1tsp
  10. Pepper powder-1tsp
  11. Garam masala-a pinch
  12. Coriander leaves-few
  13. Thick coconut milk- ½ cup
  14. Salt-to taste.
Preparation:
  • In a pan heated with oil, splutter cumin seeds.
  • Add onions chopped very finely and sauté until golden in color.
  • Add ginger garlic crushed, curry leaves and green chilly.
  • Sauté until the raw smell goes off.
  • Add turmeric powder and sauté for a minute.
  • Add coriander powder, pepper powder, garam masala and mix well.
  • Add thick coconut milk in to it along with ½ cup of water.
  • Boil for few minutes and add salt and eggs in to it.
  • Cook until the curry starts to thicken and sprinkle coriander leaves on top.
