kinnathappam / steamed rice cake
kinnathappam is a traditional Malabar recipe. Now a days its found in every where.It is a tea time recipe..Instead of raw rice you can use rice powder or basmati rice also.Jaggery can be replaced with sugar., then it will be pure white in colour. But it is the traditional and healthy way.
Ingredients:
  1. Raw rice powder- 1 1/2 cup
  2. Melted jaggery syrup- 1/2 cup
  3. Thick coconut milk-1 cup
  4. Egg-1
  5. Cardamom powder-1/4 tsp
  6. Fried nuts-to garnish
Preparation:
  • Crack and egg in a bowl.
  • Add cardamom powder and thick jaggery syrup.
  • Mix well without any lumps in it.
  • Add rice powder and coocnut milk; mix well to form a thin batter.
  • Grease a wide steel plate with ghee.
  • In a steamer place this plate and strain the batter to it.
  • Steam cooks for about 4-5 minutes.
  • Open the lid and garnish on top with fried cashews.
  • Cover and cook for another 8-10 minutes.
  • Allow to cools down completely.
  • Cut them in to pieces and enjoy.

Note: 
  • Instead of jaggery you can use sugar also. 
  • You can adjust the batter consistency by adding more coconut milk or water
