Vegatable Pulao

Vegetable pulao is a satisfying comfort food for all. It is very simple, quick and healthy choice. To accomplish for the non-vegetarians, serve it with any of your favorite side dish. Instead of water we can make it with coconut milk also, and then it becomes more rich in flavor.

Vegetable Pulao
Ingredients:
  1. Basmati rice-1 ½ cup
  2. Water-3cup
  3. Vegetables chopped- 1 ½ cup (carrot, beans, green peas, potato, corn, capsicum)
  4. Onion-1 medium
  5. Tomato-1 medium
  6. Ginger paste-1tsp
  7. Garlic paste-1tsp
  8. Green chilly paste-1tsp
  9. Oil / ghee-2tbsp
  10. Whole garam masala pieces-cardamom, bay leaf, cinnamon, pepper, fennel seeds and cloves
  11. Salt-to taste
  12. lemon juice-1tsp
  13. Coriander leaves-few
Preparation:
  • Wash and soak the rice in water for 30 minutes.
  • Heat oil/ghee in a pan; splutter whole garam masala pieces.
  • Add onion; sauté till transparent.
  • Add ginger, garlic and green chilly; sauté till raw smell goes off.
  • Add tomato; sauté till mushy;
  • Add chopped vegetables in to it and sauté for 3 minutes.
  • Add drained rice in to it; sauté for 5 minutes.
  • Add boiled water, lemon juice and salt in to it.
  • Cover the lid and cook in low-medium flame.
  • Turn off the heat when all the water gets absorbed.
  • Garnish with coriander leaves.
  • Serve hot it with raita and pickle.
