Gajar Halwa / Carrot Halwa

 Yummy is the another word for Carrot halwa with a scoop of Ice cream!!  The popular Indian sweet dish which can make in home easily with handful of ingredients. Make it in the consistency of halwa or as a pudding texture as per your choice. You can use sweetened condensed milk instead of sugar to make it more rich; but even it taste great with sugar.

  1. Carrot grated-2 cup
  2. Ghee-2 tbsp
  3. Full fat milk-2 cup
  4. Sugar- 1/4 cup (or more as per sweetness)
  5. Saffron-few strands
  6. Cardamom powder-a pinch
  7. Chopped nuts-to garnish
  • Heat ghee in a pan; fry the chopped nuts if you wish to. take it out and keep aside.
  • In the remaining ghee add grated carrots and saute in medium flame until nicely dried and started changing its color from orange to pale yellow.
  • At this point add milk and allow to boil.
  • Stir continuously and allow the milk to dry.
  • When it almost dried add sugar and mix well.
  • Stir continuously until thickens and start leaving from the sides of the pan.
  • Add cardamom powder; mix well and switch of the flame.
  • Add in to serving bowls; Serve warm or by chilled or  with a scoop of ice cream.
